I was invited to the Roxy Suite at Radio City Music Hall for a little holiday cheer before heading downstairs to see the one and only Christmas Spectacular starring the Rockettes. This past weekend the girls and I headed to @TangerOutletsDeerPark in Long Island to maximize our shopping and find gifting for everyone on our list and might I add with unbeatable deals! We’re major Athleta fans, so I made sure to shop for the girls this Christmas season while maybe grabbing a couple treats for myself there. Here’s a great breakfast frittata recipe, 🍳 perfect if you’re hosting guests next week! Big thank you to my friend @roseleprestyle for this recipe! It’s soooo good! Recipe below, but you can make this with anything!

Recipe:
6 eggs
3 potatoes
1 onion
1 pepper
2 handfuls of spinach
1/4 cup milk
1/4 cup Parmesan cheese
1/4 breadcrumbs
Salt/Pepper

Cook the potatoes in olive oil till fully cooked. This takes anwhile so be patient. Dice onion and peppers, add to pan. In bowl combined eggs, milk, cheese, breadcrumbs, salt/pepper, spinach. Add in mixture to pan and cook until almost done. Next you’re going to flip the frittata and cook on other side. Tip: make sure there’s no more liquid in pan. Flip and cook on other side and serve! Enjoy!
