A quick and easy breakfast is what it’s all about in our house when we have to get everyone out the door for school. I have a houseful of kids and trying to get them all ready and out the door on time is a little bit like herding cats. You can do it, but boy, is it hard. I’ve made it my mission to make mornings easier, and one of the ways I do that is by making sure we have quick and easy breakfast options on hand every morning.
Of course, some mornings we just have cereal, but I can only do that for so many days before we’re all bored. What I’ve done for a long while now is make homemade waffles in advance. It’s a simple recipe that I can make in batches on the weekend and freeze for quick breakfasts on school days or on any day we need to be out the door fast.
These waffles are great because they’re delicious on their own, but they can also be used to make an even heartier breakfast that really powers you through the day. I tend to eat waffles plain, but my kids like to make waffle sandwiches using eggs and sausage or bacon. They get a protein kick and the sandwich is a nice combo of savory and sweet.

Inside the waffles:
Preheat waffle iron. Mix together in a large bowl flour, milk, oil, eggs, Truvia Original Sweetener, baking powder, salt and vanilla. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Once your waffles are done, assemble your sandwiches! My kids love these with eggs, bacon, and cheese!

This recipe is perfect! Waffles come out fluffy inside, crispy outside, and completely delicious. This waffle has fewer calories than some other recipes, which is why I tried it, and I’m pleased that it has all the flavor of classic waffles. It’s definitely not diet food, but it’s about 200 calories less than other recipes I’ve tried, and is within the calorie range that won’t throw my diet completely off if I cut back with other meals throughout the day. I did “healthy it up” a bit by using applesauce instead of oil, and it worked well, although waffles weren’t as crispy. Thanks for posting this recipe! My family begs me to make these waffles every day!
