I don’t know about you, but I’m fresh out of ideas on what to cook for dinner these days. I think I’ve made our favorite go-to’s at least three times by now.
Luckily, my group texts with friends keep things new and fresh with their recipe ideas and what they are cooking up for dinner. I’m taking this one from a Stroller In The City team member, Madison! vegetable oil
1Β onion, chopped fine
ΒΎΒ teaspoon pepper
Β½Β teaspoon salt
3Β garlic cloves, minced
2Β teaspoonsΒ
ground cumin
4Β cupsΒ chicken broth
2Β cans cannelloni beans,Β rinsed
1Β cupΒ jarred green salsa
1 2 1/2 pd rotisserie chicken, shredded 3 cups
1/2 cup chopped cilantro
Directions:
Heat oil in Dutch oven over medium heat until it shimmers. Add onion, pepper, and salt and cook until softened, about 4 minutes. Stir in garlic and cumin and cook until fragrant, about 1 minute.-Increase heat to medium-high. Stir in broth, beans, and salsa and bring to boil.
Reduce heat to medium-low and simmer until flavors have melded, about 10 minutes.-Using the back of a wooden spoon, mash some beans against the side of the pot until the chili is slightly thickened. Stir in chicken and cilantro and cook until warmed through, about 2 minutes.

I would say 1/2 tablespoon
I have made this many times and itβs now a family favorite; I do add a 3rd can of beans to make it a bit heartier for my husband.
