Zucchini Cheese Scones

Starting out with fresh herbs and a comfort food, scones can be savory! This is a fun twist on a classic recipe to enjoy at your favorite park. The best thing is that you can sneak veggies into this for your kids to enjoy and they won’t even realize because the cheese takes over.

Caprese Sandwich

Finger food is the best way to enjoy a meal in the great outdoors. Sandwiches are in individual servings already so they are easy to disperse and this one tastes like a light salad on your choice of warm bread.

I know it’s not summer yet, but recipes like this get me so excited! You can cut these up like sushi or eat them almost like a burrito. Fill it with whatever vegetables you like and create a soy sauce and peanut butter sauce to dip it in for a fun spin.

Broccoli Pasta Salad

We all need a go-to pasta salad recipe. I’m here trying to up our veggie intake, as well so the addition of the broccoli here has been a game changer! It’s one of the most quick recipes you’ll find and it can actually be one of your new go-to make-ahead recipes because it stores so well!

Mexican Street Corn Salad

My mouth has been watering ever since I found this recipe! It screams summer to me and again, I’m enjoying spring but definitely trying to perfect summer recipes at the same time. The cheese on this absolutely makes it so much better, so feel free to measure with your heart!

Herbed Lobster Rolls

We are a lobster roll loving family! I think these are actually served best warm with warm butter but they last well in a cooler for your walk to the park. Add some fresh dill and these are perfection!

Greek Salad

Greek salads are my all-time favorite salads. The ingredients are so fresh and it’s light so you won’t get bloated. You have the option to do this as a pasta salad as well but I prefer it as a traditional salad.

Deviled Eggs

Deviled eggs are the epitome of traditional appetizers. Everyone loves them and they’re actually kinda fun to make! These have bacon on top but you can substitute for chives and they are just as good.

Spicy Kale Chips

Don’t know what to do with your extra kale? Bake them and make chips! It only requires some olive oil and spices and the oven does all the work for you. I recommend massaging the oil into the kale for the best flavor.

Pineapple Salsa

Pineapple sweetens up a salsa to make it perfect for spring! It’s the perfect sweetness to a little kick and is so cute served in a cut out pineapple. This salsa is bright and full of flavor.

Red Lentil Hummus

We love hummus but are always looking for a way to get more protein in and add flavor. The red lentil makes it a fun color and increases the protein so you’ll be fuller for longer.

Oatmeal Cookies

I like to make oatmeal cookies for days at the park because there’s nothing in these to make them melt. They are soft and chewy and the kids love them!

Lemon Butter Shortbread Bars

Another great options that won’t melt in the sun, who doesn’t love lemon?! These can be cut into individual servings and have that spring flavor you’ve been craving all winter long.

Peanut Butter Oat Jam Bars

PB&J but make it a dessert! The base layer is a creamy peanut butter oat crust and it’s topped with your choice of jelly. This has some great protein and the jelly cuts the saltiness to make it the ideal balance.
