Gorgonzola Steak Salad

One last hurrah for summer recipes! Siella loves salads, so we’ve been trying out new salad recipes all summer long to perfect a few staple recipes. It’s safe to say, this gorgonzola steak salad made the list! Salads are also a great school lunch idea and can easily be prepped the night before– just keep the dressing on the side.

If you’re looking to use your grill one last time before the summer ends or are in search of a light dinner option full of vegetables, you will love this one!

 

Ingredients

1 Red Onion

2 Avocados

1 Cup of Tomatoes

1 Cup Gorgonzola Crumbles

Head of Lettuce

2 Lemons

Tbsp Honey

Olive Oil

Directions

You can begin by preparing your steak how you like it, so this recipe more easily incorporates into your lifestyle. You can grab any skirt steak and large skillet, place steaks on it to start cooking over medium-high heat. Season the steak as you like, we do black pepper, and pour marinade we use frequently into a large ziplock bag with the steak to let it marinate for awhile beforehand. If you want, you can totally grill steak instead on an outdoor grill. If you have a cast iron grill pan, that would be even better!

Chop 1 red onion, 1 cup of tomatoes, 2 avocados and a head of lettuce– or grab some baby arrugula, that’s also great! Combine the olive oil, 2 lemons and honey. Assemble the salad and drizzle the dressing on top.

This salad is easily amendable! You can add cucumber slices or grilled corn on top of the salad, that would be tasty! If you aren’t into a lemon honey olive oil dressing, you can go for a red wine vinegar or mustard vinaigrette, as it would compliment the steak well. This is also something you could easily throw together with leftover steak from another meal and you can simply divide lettuce, slice halves grape tomatoes and toss all of the ingredients together.
