Easy & Healthy Chicken Fajitas

It can be difficult to find a recipe to keep in your back pocket that your whole family will love. I like to go for options that are either pretty healthy or have healthy alternatives that are easy to swap in. My family loves healthy chicken recipes, so I ditched fajita meat and went for the best chicken fajitas I could create. It’s an easy recipe, which makes for an easy dinner on weeknights. Enjoy these healthy chicken fajitas and take note of this simple recipe for busy nights!

Ingredients

  • 2 Chicken Breast
  • 3 Bell Peppers
  • Red Onion or Yellow Onion
  • Can Of Chopped Tomatoes
  • Shredded Cheese Of Choice
  • Lime
  • 1 tbsp Paprika
  • 1 tbsp Garlic powder
  • 1tbsp Onion Powder
  • 1tbsp Red Pepper Flakes
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • Flour tortillas

You can make a few swaps here if you’d like! For instance, you can ditch the flour tortilla wraps and go for corn tortillas. A lot of people enjoy having rice in their fajitas or on the side. It adds a filling element, so you can cook brown rice or cauliflower rice to have alongside your traditional fajitas. My family likes guacamole, so we either make some or add avocado slices to have as a healthy fat. Traditionally, these are made with red bell peppers, but you can mix it up and go for green bell peppers.

Directions

-Slice thin chicken breast in half and then marinate with dry spices.

-Chop red onion and bell peppers.

– Grill chicken breast in a large skillet on the stove top. Cook each side for 10-13 minutes.

–  Once chicken is cooked, shred chicken meat using a fork.

-In the same pan you grilled your chicken breast, add some vegetable oil or olive oil and sauteé peppers and onions.

-Once peppers are cooked and onion is browned, add can of tomatoes and bring to a boil.

– Add chicken meat and mix together well.

-Construct your tacos adding your meat mix, followed by topping with shredded cheese and a squeeze of lime.

This is an easy recipe to meal prep and it stores really well in an airtight container. It’s made with simple ingredients that you probably already have in your fridge! Pro tip: warm tortillas on the stove for a moment to make them even better! Your family will give them a 5 star rating! You can always use any of your favorite toppings like salsa, guac or sour cream. I even think this would be amazing as shrimp fajitas!
