Chicken Meatballs Stuffed with Mozzarella

When it comes to weeknight dinners, I’m always looking for something that feels comforting, easy, and guaranteed to be a hit with my kids and these mozzarella-stuffed chicken meatballs with pesto pasta check every box. They’re simple enough to make after a long day, but still feel special, especially when you cut into a meatball and get that melty mozzarella center. It’s one of those meals that disappears fast, which is always the best sign.

The meatballs are light, flavorful, and packed with protein, and stuffing them with mozzarella instantly makes them kid-approved. I love pairing them with pesto pasta because it adds so much flavor without needing a complicated sauce. Everything comes together quickly, making it perfect for busy school nights when everyone’s hungry and patience is low.

What I really love about this recipe is how versatile it is. You can prep the meatballs ahead of time, bake or pan-sear them, and toss them into pasta, serve them on their own, or even save leftovers for lunch the next day.

Recipe:

Ingredients

    •    1 lb ground chicken

    •    ½ cup breadcrumbs

    •    1 egg

    •    ¼ cup grated Parmesan

    •    1 teaspoon garlic powder

    •    1 teaspoon Italian seasoning

    •    Salt and pepper, to taste

    •    Mozzarella cheese, cut into small cubes

    •    Olive oil

    •    Rigatoni pasta

    •    Store-bought or homemade pesto

Instructions

    1.    Preheat oven to 400°F.

    2.    In a bowl, mix ground chicken, breadcrumbs, egg, Parmesan, garlic powder, Italian seasoning, salt, and pepper until just combined.

    3.    Scoop a small amount of the mixture, place a cube of mozzarella in the center, and roll into a ball, fully sealing the cheese inside.

    4.    Place meatballs on a lined baking sheet, drizzle lightly with olive oil, and bake for 18–22 minutes until cooked through.

    5.    Meanwhile, cook pasta according to package instructions. Drain and toss with pesto.

    6.    Add the meatballs to the pasta, toss gently, and serve warm.
