Normally when I do recipe roundups, I like to make sure I include a few recipes that would be tasty for vegetarians. Today, we are talking only about vegetarian recipes that could easily be amended or are already an option for vegans, as well. There are a lot of food sensitivities and preferences that are more common in today’s world, and I think I’ve found some of the very best recipes to appeal to those who are meatless. We all have busy weeknights to deal with, so why not come home to a plethora of easy vegetarian dinner recipes! Let me know if you try any of them out!
You had me at avocado crema. Buddha bowls or grain bowls are wildly popular these days and I love them because they really are such a quick and simple meal to make. But they are surprisingly filling! Creamy avocado can fix any bad mood! You can prep all of these ingredients weekly and keep them in your fridge to throw together for an easy weeknight dinner.

If you know me, you know I’m a Greek salad fan! I can’t get enough of them! I love the addition of chickpeas to this recipe because they add a bit of protein in. There’s just something so refreshing about fresh, crisp veggies in a bowl together, like fresh tomatoes. I always feel good after eating it, too, never bloated! It’s the best way to end the day and one of the greatest, easy recipes. I like to add red onions to mine for more of a crunch and lemon juice for extra flavor!
Cauliflower gnocchi is a newer trend that’s been rising to kitchens. Basically what it is, instead of traditional potato gnocchi, it’s made out of cauliflower. Which is a lighter and great for all cauliflower fans! I recommend pan frying the Trader Joe’s or Whole Foods cauliflower gnocchi, rather than boiling it. Personally, I find it less sticky that way! This is such a simple recipe that is sure to be a staple in your house.
I love doing sheet pan dinners because they are so easy! This is one of the best vegetarian dinners I’ve found and it’s incredibly filling. This specific recipe is loaded up with sweet potatoes, red onion, chickpeas, red peppers and extra veggies loaded on couscous. I actually think cooking the couscous in a vegetable broth would be the most delicious way to eat them.
This recipe gives me crab cake vibes, but make it vegetarian cooking. It includes really healthy ingredients and is perfectly paired with hearty salads. My favorite part is the vegan cilantro crema! Fresh herbs can take this easy recipe to the next level. Make it any night of the week for an easy vegetarian meal.
Beans are a great source of protein and these black bean burgers are a tasty way to make sure you’re getting it in for your meal! This is another recipe that is fairly easy to make vegan recipes out of, as well if you’re looking to do so! Have you heard of meatless Monday? I recommend this burger if you’re trying it out because it’s one of the most easy vegetarian meals to make and such a quick dinner. Black beans are a great source for plant-based proteins and if you’re trying to consume less meat, this is a great way to get in enough protein for dinner tonight! They can also be made simply in the air fryer.
I haven’t had shepherd’s pie in a long time. Replacing regular potatoes with sweet potatoes is something I’m always a fan of! I think this recipe looks so delicious, I’m really excited to get it on my dinner table and see what my family thinks. This is would also make a great side or meal for special occasions!
Finishing up with one of the most delicious recipes! First of all, there’s virtually no clean up because you eat it out of the squash. Secondly, I love the creative ways people use spaghetti squash- which can also replace pasta for spaghetti. This is a great recipe that can be easily amended to the toppings you’d like to include or take out. dd some sour cream and melty cheese and it’s at the top of our easy vegetarian recipes with simple ingredients.
