Super Easy Baked Halibut Recipe

Over the past couple of weeks, halibut has been in constant rotation on my dinner menu. This super easy halibut recipe is flavorful, and the perfect weeknight dinner your whole family will love! I usually pair this dinner with veggies, a salad, sometimes rice making it super healthy as well, perfect for keto or low carb diets as well! Halibut is also a complete protein, meaning that it contains all the essential amino acids.

I’ve learned from experimenting these last few weeks that halibut recipes don’t have to be complex or time-consuming. Grab a couple of fillets (I like fresh not frozen), and some herbs and let your kitchen staples do the rest of the work. A simple blend of flavors is all you need for a fresh and fulfilling oven baked halibut dinner in just 30 minutes. Two new staples in my kitchen must-haves are Fancy Peasant Greek Extra Virgin Olive Oil and Jennifer Fisher salts! I’m telling you these two simple ingredients have been game changing my daily meals!

In speaking with my local fish market these days, I’ve learned halibut is best in the spring and summer, between March and September, and should be avoided from December through February.

Ingredients:

  • 2 pounds halibut
  • 3 lemons
  • 1/4 cup olive oil
  • 4 cloves of garlic
  • 1 teaspoon red pepper
  • 1/2 cup white wine
  • 1/4 cup butter
  • 1 bunch fresh thyme
  • 1/2 teaspoon Jennifer Fisher universal salt
  • 1/4 teaspoon pepper

Directions:

  • Preheat oven to 350°. Place halibut in baking dish. Drizzle with EVOO, squeeze fresh lemon juice on top. Top with salt, pepper, red pepper, garlic, and butter. Pour the white wine into the bottom of the pan along with your squeezed lemons. Top with fresh thyme and sliced lemons.
  • Bake uncovered for 30 minutes. The fish should flake easily.
