During our time in these past few months, I’ve tried to simplify the constant non-stop of cooking by using my crock pot at least once a week. It makes what feels like an endless day a bit easier when I know dinner will be ready that evening and almost feels like I can take a night off cooking. One of my favorite recipes to make is my Mama’s Crock Pot Chicken. She’s been making this recipe since I was a kid and I’m happy to report my kids love this home dish just as much as I do!
Ingredients!
- Whole Chicken
- 3 Carrots
- 1 Onions
- 2 Celery
- 4 Cloves Garlic
- Lemon
- Cumin
- Rosemary
- Salt and Pepper
- Thyme
- Potatoes (optional)
- 1/2 Water or Chicken Stock (I use water)
Place your whole chicken into the crock pot. Rub the chicken with salt, pepper, garlic powder, and cumin. Dice up the carrots, celery, onion, potatoes, and place on sides of the chicken. Add 1/2 cup water (some people like chicken stock) and top with fresh squeezed lemons, thyme and rosemary. Cover and cook on high for four hours! Enjoy!

Crockpot recipes are the best! I know the instapots are all a craze nowadays and it is awesome, but I tend to go back to my easy crockpot 🙂
Monday is always the busiest day of the week for me, so this crock pot chicken recipe will be on our dinner table on Monday (you can be sure of that). A crock pot is a must have for every homemaker!
