During the winter months, I make sure to use my crock pot at least once a week! It makes our crazy week nights a bit easier when I know dinner will be ready once we get home, that way I’m not wasting time in the kitchen cooking for hangry kiddies that still need to do their homework, bath, and get ready for bed! One of my favorite recipes to make is my Mama’s Crock Pot Chicken. She’s been making this recipe since I was a kid and I’m happy to report my kids love this home dish just as much as I do!
- Whole Chicken – we like to use Bare Chicken
- 3 Carrots
- 1 Onions
- 2 Celery
- 4 Cloves Garlic
- Salt and Pepper
- Potatoes (optional)
- 1/2 Water or Chicken Stock (I use water)
Place your whole chicken into the crock pot. Rub the chicken with salt, pepper, garlic powder, and cumin. Dice up the carrots, celery, onion, potatoes, and place on sides of the chicken. Add 1/2 cup water (some people like chicken stock) and top with fresh squeezed lemons, thyme and rosemary. Cover and cook on high for four hours! Enjoy!
