Easy Chicken Tacos During Quarantine

Being confined to the four walls of our apartment for almost a full week, I’ve traded office time for time spent in the kitchen, preparing breakfast, lunch, and dinner around the clock for my husband and three children. Some days, especially for breakfast and lunch, I feel like I’m a short order cook, but secretly, I think I need to admit that I love to cook. Throughout my many group text chains and online chat groups, we share daily inspirations from our new norm with memes, virtual happy hours, emotional breakdowns, and my favorite addition- new ideas for dinner recipes. Amidst it all, cooking has helped me remain calm, while simultaneously recruiting three little sous chefs for some help. Happy to report that I have compiled some of my new found dinner dishes, and plan to share with you in guys in the upcoming weeks! In the meantime, check out this easy chicken taco recipe. No doubt, it will be in heavy rotation for dinner menus from now on!

Ok, I shared, now it’s your turn. Please post some of your favorites in the comments below!
