With it being still fresh in the New Year, I’ve spent more time in the kitchen, preparing new recipes for breakfast, lunch, and dinner for my family. Although, some days, especially for breakfast and lunch, I feel like I’m a short order cook, but secretly, I think I need to admit that I love to cook.
Throughout my many group text chains and online chat groups, we share daily inspirations for new ideas for dinner recipes. Cooking has always helped me remain calm, while simultaneously recruiting three little sous chefs for some help. Happy to report that I have compiled some of my new found dinner dishes, and plan to share with you in guys in the upcoming weeks! In the meantime, check out this easy chicken taco recipe. No doubt, it will be in heavy rotation for dinner menus from now on!

Easy Chicken Tacos:
Here’s what you’ll need. I know this may seem like a lot of ingredients, but I bet most of you already have these in your pantry!
Ingredients:
Cayenne Pepper
Ground Coriander
Cumin
Onion Powder
Garlic Powder
Oregano
Paprika
Chili Powder
Salt/Pepper
Chicken 1-2 pounds depending on family size
Red Cabbage (shredded)
Avocado
Mayo
- Sriracha
Lime
Fresh Cilantro
Tortillas – we like whole wheat or flour (you can use corn tortillas or taco shells, too)
Seasoning The Chicken:
Make the seasoning! This recipe is from HERE.
1 teaspoon chili powder
1 teaspoon coriander powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cumin powder
1/2 teaspoon black pepper powder
1/2 teaspoon Mexican oregano
1/4 teaspoon cayenne pepper powder
Stir all ingredients together in separate bowl, then rub on your boneless chicken breasts or boneless skinless chicken thighs until they are fully covered. Grilled chicken on barbecue, or for us “city folk” on a large skillet until they are fully cooked! You can use a slow cooker for your chicken or cook your meat over medium-high heat. We also like to have warm tortillas, so we will place those in a pan for a moment to warm up. Cut up your chicken into small pieces or shred it, so it’s easier to eat in your soft tacos. Assemble all of your favorite toppings on top of your chicken mixture to enjoy this delicious recipe. Can you believe how easy it is to make homemade taco seasoning?! If you’re looking for a bit more filling, mexican rice can be added to the base of these easy tacos.
Chipotle Mayo!
Mix equal amounts of sriracha and mayo together to make the chipotle mayo sauce. This makes taco Tuesday even better! But if you’d rather have sour cream and guacamole or pico de gallo, that would also work for these easy chicken tacos! Of course, any of your favorite taco toppings will work for taco night! The limit does not exist!
Make Your Tacos!ย
Add your chipotle sauce to the tortilla and add chicken. Top with cabbage, avocado, squeeze of fresh lime, and cilantro. This recipe would also be great with ground beef or as a taco salad minus the tortillas! Keep this recipe handy or put it on a recipe card to add to your collection!
