Chicken Pot Pie The Whole Family Can Make

When I knew our crazy busy schedules were coming to a halt for social distancing, I thought for sure we would be going out of minds in our small apartment. But I have to say, our days haven’t been long at all, in fact they’ve been going by fast. I mean, I may not be able to tell you which day of the week it is, but that’s another story. Jason and I have been homeschooling the kids since March 13th, and there hasn’t been an ounce of downtown since. Between tutors and online learning, there’s so many resources for them out there to continue learning and moving. I like to finish school hours around 2ish each and have the kids start on their chores, which includes vacuuming, making their beds, and helping out in the kitchen. Siella requested I make this Chicken Pot Pie last week, which is always such a hit in our home! This classic homemade chicken pot pie is the ultimate comfort food! And I promise you once you learn how to make this easy pot pie, you’ll never buy a chicken pot pie again!

Here’s what you’ll need:

Crust

1 box refrigerated pie crusts, softened as directed on box

Filling

1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups water
2 Bou Bouillon Cubes
1/2 cup milk
2 1/2 cups shredded cooked chicken
2 cups mixed vegetables, we use carrots, celery, onions, peas

In 2-quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened.

Stir in chicken and mixed vegetables. Remove from heat.

Heat oven to 425°F. Spoon chicken mixture into mini cups all crust-lined pan. Cut slits in several places in top crust.

Bake 30 to 40 minutes or until crust is golden brown. Enjoy!
