Summer Squash Salad With Avocado Dressing

Summer is my most favorite time of the year. In the summers, I can’t get enough of the BBQ. I’ve practically made every dinner on the grill. Grilling, in turn, calls for amazing salad recipes to pair with all the grilling. This is where my mom’s summer squash, Brussels, and arugula salad comes in handy.

You will love this salad recipe, but especially the avocado dressing. It tastes so fresh and very easy to make. It really will make a great side dish for all your summer grilling and you may want to use this Avocado dressing on your chicken next time!

Ingredients For Salad

  • 1 lb butternut squash
  • 1 lb brussels sprouts
  • 2 tablespoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 tablespoons olive oil
  • Arugula Salad

Avocado Dressing Ingredients

  • 2 avocado
  • 2 cloves garlic, small
  • 1 lime, juiced
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix the butternut squash, brussels sprouts, dried oregano, salt, pepper, and olive oil until the veggies are evenly coated.
  3. Pour the vegetables onto a baking sheet in one even layer and roast for 40 minutes.
  4. To make the dressing, place the avocado, garlic, lime juice, olive oil, salt, and pepper in a blender or food processor and blend until the mixture is light and creamy.
  5. To assemble the salad, place a handful of mixed greens on a plate and top with the veggies. Spoon on the Avocado Dressing and serve!
  6. Enjoy!
