Summer is my most favorite time of the year. In the summers, I can’t get enough of the BBQ. I’ve practically made every dinner on the grill. Grilling, in turn, calls for amazing salad recipes to pair with all the grilling. This is where my mom’s summer squash, Brussels, and arugula salad comes in handy.
Salads are great because they are light and easy to enjoy in the heat. An avocado salad base is something that is always great. If you wanted to keep it simple, you could just add red onion, fresh herbs, some lemon juice and extra virgin olive oil and you’ll be good to go with a lunch! For dinner, we added yellow squash to the buttery avocado to make it heartier. You will love this salad recipe, but especially the avocado dressing. It tastes so fresh and very easy to make. It really will make a great side dish for all your summer grilling and you may want to use this Avocado dressing on your chicken next time!
Making the Salad
A summer squash salad is something that will be a crowd pleaser! Adding grilled vegetables such as a medium zucchini would be the best way to make it more filling. We kept it on the vegan side, but feta cheese pairs well with fresh avocados in warm weather. A drizzle of olive oil can completely change a dish for the better and on summer days, I love to enjoy salads. Grab your cutting board and sea salt and lets make this delicious salad a regular addition to your dinner rotation!
Start with a small bowl for this summer squash salad recipe. If you have a vegetable peeler, that is going to make it a little easier for you, but for this simple salad, you can roast veggies without one. This can be served for main courses, lunch or dinner sides in the summer months and my kids give it a 5 star rating. If you wanted to add more protein, you could throw in fava beans or grilled chicken. Feel free to amend as you’d like for Kalamata olives, cherry tomatoes, fresh dill, salty cheese or crumbled feta. It stores well for up to 4 days in an airtight container or plastic wrap on a bowl. This easy recipe will make your life tastier and has a serving time of about an hour just to make sure the perfect dish has the veggies cooked through rather than in raw form.
