Summer Squash Salad With Avocado Dressing

Summer is my most favorite time of the year. In the summers, I can’t get enough of the BBQ. I’ve practically made every dinner on the grill. Grilling, in turn, calls for amazing salad recipes to pair with all the grilling. This is where my mom’s summer squash, Brussels, and arugula salad comes in handy.

Salads are great because they are light and easy to enjoy in the heat. An avocado salad base is something that is always great. If you wanted to keep it simple, you could just add red onion, fresh herbs, some lemon juice and extra virgin olive oil and you’ll be good to go with a lunch! For dinner, we added yellow squash to the buttery avocado to make it heartier. You will love this salad recipe, but especially the avocado dressing. It tastes so fresh and very easy to make. It really will make a great side dish for all your summer grilling and you may want to use this Avocado dressing on your chicken next time!

A summer squash salad is something that will be a crowd pleaser! Adding grilled vegetables such as a medium zucchini would be the best way to make it more filling. We kept it on the vegan side, but feta cheese pairs well with fresh avocados in warm weather. A drizzle of olive oil can completely change a dish for the better and on summer days, I love to enjoy salads. Grab your cutting board and sea salt and lets make this delicious salad a regular addition to your dinner rotation!

Ingredients For Salad

  • 1 lb butternut squash
  • 1 lb brussels sprouts
  • 2 tablespoons dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 tablespoons olive oil
  • Arugula Salad

Avocado Dressing Ingredients

  • 2 avocado
  • 2 cloves garlic, small
  • 1 lime, juiced
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix the butternut squash, brussels sprouts, dried oregano, salt, pepper, and olive oil until the veggies are evenly coated.
  3. Pour the vegetables onto a baking sheet in one even layer and roast for 40 minutes.
  4. To make the dressing, place the avocado, garlic, lime juice, olive oil, salt, and pepper in a blender or food processor and blend until the mixture is light and creamy.
  5. To assemble the salad, place a handful of mixed greens on a plate and top with the veggies. Spoon on the Avocado Dressing and serve!
  6. Enjoy!
