Baking Up Ginger Cookies This Holiday Season

Let’s talk holiday baking! Today I’m sharing a family favorite recipe, Brown Butter Ginger Cookies with a Lemon Icing. These ginger cookies have been in my family for years, but I’m making a reduced-sugar version of these this year! I make these cookies every holiday season for fun holiday movie nights, I even hand them out to friends and family, and they make perfect gifts for teachers as well! My mother made it before me, and my grandmother made it before that. It’s a classic holiday recipe that my entire family has loved for generations. I switched from sugar to Truvia Sweet Complete Sweeteners, so these delicious ginger homemade cookies are made with fewer calories and no sugar, a combo that I love.

I love using Truvia Sweet Complete Sweeteners, especially for classic family recipes like this because they add sweetness from Stevia leaf extract, and they do it in cup-for-cup measurements so I don’t have to figure out percentages. I just measure like I always do! These sweeteners also leave the texture of my favorite foods just as they’ve always been which means my ginger cookies are soft and chewy, and the lemon icing sets perfectly every time. Before we get into the recipe, there’s one more thing I want to share about these sugar-free ginger cookies. Have fun with them! There’s no better time than the present to test kitchen baking recipes to make a holiday staple. Henceforth, on to the recipe!

Recipe: Brown Butter Ginger Cookie with Lemon Icing

Cookie Ingredients: 

 

1/2 cup Truvia Sweet Complete Granulated All-Purpose Sweetener

1/4 cup Truvia Sweet Complete Brown Sweetener  

1/2 cup butter, softened

1 large egg

1/4 cup mild molasses

1/2 cup hot water

2 1/2 cups all-purpose flour

1 teaspoon baking soda

2 teaspoon ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground clove

Icing Ingredients: 

3/4 cup Truvia Sweet Complete Confectioners Sweetener
1/2 cup butter, softened
2 teaspoons freshly grated lemon zest
4 to 6 tablespoons milk

Cookies: Heat oven to 375 degrees (F). Combine Truvia Sweet Complete Granulated All-Purpose Sweetener, Truvia Sweet Complete Brown Sweetener, 1/2 cup butter and egg in a large bowl. Beat at medium speed with an electric mixer or whisk until well mixed. Add molasses and water. Beat until well mixed again. Add all remaining dry ingredients to the wet ingredients. Beat at low speed until well mixed which will be when the mixture resembles heavy cake batter.

Drop dough by rounded teaspoonfuls. Place the dough balls 2 inches apart, onto parchment paper. Bake 8-10 minutes or until set, depending on whether you want crisp edges. Allow the cookie trays to cool completely. You can even put the holiday cookies on a wire rack for the cooling process.

Icing: Combine Truvia Sweet Complete Confectioners Sweetener, 1/2 cup butter and lemon zest in a small bowl. Whisk at medium speed, scraping bowl often and gradually adding enough milk for desired frosting consistency. Frost cooled cookies. Sprinkle with lemon zest or sprinkles, if desired.
