Lasagna soup is the kind of meal that instantly makes a house feel warm and inviting. It’s become one of my favorite go-to dinners when I want something comforting that still feels easy and approachable.

I like to make a lighter version by swapping the usual chopped meat for ground turkey. It still delivers that hearty, satisfying bite, but feels a bit fresher and less heavy. Toward the very end, I stir in a handful of fresh spinach for a boost of greens. It wilts right into the soup, adding color and nutrients without taking away from the classic lasagna flavor we all love.
This soup is perfect for busy weeknights, cozy weekends, or anytime you’re craving comfort food with a simple twist. Serve it with crusty bread, a side salad, or just on its own with plenty of cheese on top. It’s even better the next day, making leftovers something to actually look forward to.
Recipe
Ingredients:
1 lb ground turkey (can also do chicken sausage)
1 small onion, diced
3 cloves garlic, minced
Salt and pepper, to taste
1–2 teaspoons Italian seasoning
2 tablespoons tomato paste
1 (24 oz) jar tomato sauce
4 cups chicken broth
8 lasagna noodles, broken into pieces
2–3 cups fresh spinach
Ricotta cheese, for serving
Shredded mozzarella or Parmesan, for topping
Instructions
In a large pot over medium heat, cook the ground turkey with the diced onion until fully cooked. Add garlic, salt, pepper, and Italian seasoning. Stir in tomato paste, marinara sauce, and chicken broth. Bring to a gentle boil. Add broken lasagna noodles and simmer for 12–15 minutes, until noodles are tender. Stir in spinach and cook for 1–2 minutes until wilted. Adjust seasoning as needed. Serve hot with a spoonful of ricotta and a sprinkle of mozzarella or Parmesan.
