Baking and cooking in general can be such a therapeutic hobby. Being a mom of 3, cooking and prepping dinner often feels like a chore and another task on my to do list, but baking is always a pleasure! Though the process of baking is well known to be more scientific then basic cooking recipes, I have always found it to be really relaxing. And its always a win win because the whole family loves baked goods and treats. This season, I’ve been exploring new recipes! Someone I found to always be of great inspiration is Adrianna from A Cozy Kitchen! She always offers her readers and followers a step by step video of a recipes process making delicious meals and treats available to chefs of all levels!
I recently decided to try her spin on strawberry shortcake biscuits!
Make the Dough
Though the dough can be prepared in advanced I personally made it the day of. This recipe truly calls for very little ingredients making it a convenient and delicious treat to prepare spontaneously. I love that these are all ingredients we have in our cupboards already. One thing about making recipes as a busy mom is that I need them to be on the simpler side. This is primarily for the sake of time! Between getting all the ingredients out and putting them together to go in the over. And then the cleanup, it all needs to be done in an easy yet delicious way. We love these biscuits and they save well in an airtight container for up to 1 week. If you warm them up a bit and then assemble daily vs making them all at once that is another great option.
Assemble
Strawberries are definitely a summer favorite in our household, so when I stumbled upon this recipe I knew it would be one my kids would gobble up. Who doesn’t love sweet juicy berries in summer? Making sure you assemble everything in layers so that the biscuits don’t get too soaked from the berries is essential. The assembly is the most important and fun part of this. The kids love to help with this portion too! Enjoy these with a nice refreshing beverage this summer. You could even add raspberries or blueberries for another delicious and tart bite to this fantastic recipe idea. This recipe can also be made with peaches!
Overall I would have liked more width on my biscuits but they definitely weren’t lacking in deliciousness. The kids and Jason went crazy for them!
I cant emphasize enough how easy and fast this recipe was to whip up. A great option for all us busy on the go moms! I really wish we weren’t in quarantine so we could have shared with friends, but I know I’ll be making these again for future gatherings with family and friends.
