This summer has certainly been a different kind of summer for sure. We pretty much cancelled all of our summer plans and have been staying local and spending a ton of time at my Momโs house. I might even say weโre just shy of moving in here. Luckily for us, (actually my kids), she has a big backyard and pool, quite the opposite of our New York City apartment, and weโve just been soaking up every last bit of sun and splash and our family time together here.
Something Iโve been doing all summer long, and a treat for this city girl, is grilling! Grilling is the ultimate summer staple and I love that it keeps me outdoors with the kids, and it really is less mess to clean. With Labor Day just around the corner, Iโm already planning my menu. Labor Day eats are always a big part of the holiday for myย family.
From pasta salads, burgers on the grill and everything in between, Labor Day is just as much about the food as it is getting together with the family. This year, we wonโt be gathering with friends or extended family for the end of summer bash, but we will certainly be having our own Labor Day celebration to bid farewell to yet another summer. As always, BJโs Wholesale is helping me get ready for the big day with its value and convenience.
Although we won’t be in the same space, we’re not going to be alone this Labor Day. Everyone in my family has smartphones, so we’ll be connecting over those to stay socially distanced, but together in spirit. We’ll be able to hang out and celebrate the holiday together even if we can’t be physically together. And while we’re doing that, we’ll all be noshing on our favorite Labor Day eats. We’re all going to make the same dishes so we can “eat” together as a family.
Iโve added a few new dishes to my Labor Day menu this year, but the one I think will be the biggest hit is this BBQ Jerk Chicken. Itโs a family favorite around here, and shockingly enough, my kids love spicy food. The recipe calls for just a few ingredients, but one that I always have on hand during the summer months is Hellmannโs Mayonnaise. While stocking up at my local BJโs Wholesale this month, I made sure to grab a double pack of Hellmannโs Lite Mayonnaise. Itโs the richest, creamiest addition to anything from sandwiches to desserts, and the one I always get. In our home, I use Hellmannโs not only for the usual summer side salads and condiments, but also for marinades like this jerk chicken recipe!
I always shop at BJโs because it combines the savings and selection of a club with the service and friendliness of a corner market. Thatโs the best combination around. This shop included my double pack of Hellmannโs Light Mayonnaise, Chicken and Spring Mix salad from Wellsley Farms, watermelon, and these fun festive paper plates and napkins.
BBQ Jerk Chicken
Ingredients:
2 Tbsp. Hellmannโsยฎ or Best Foodsยฎ Real Mayonnaise 2 Tbsp. Caribbean Jerk seasoning blend
2 Tbsp. soy sauce
4 boneless, skinless chicken breasts
Directions:
For marinade, combine Hellmannโsยฎ or Best Foodsยฎ Real Mayonnaise, seasoning and soy sauce. Pour marinade over chicken in large, shallow non-aluminum bakingย dish or plastic bag. Cover, or close bag, and marinate in refrigerator, turning occasionally, 30 minutes.
Remove chicken from marinade, discarding marinade. Grill chicken 12 minutes or until chicken is thoroughly cooked, turning once. Serve with side salad and enjoy!

hellmann’s is the only mayo worth discussing. do you ever dunk your steamed broccoli in mayo? one of my favorite ways to use mayonnaise.

BBQ Jerk Chicken seems like a great idea for September 7! I love chicken and it is much leaner and healthier than red meat. I like it grilled also.
