One of our favorite holiday traditions is a trip to Rockefeller Center, to see the magnificent Christmas tree and its colorful lights, followed by Radio City Christmas Spectacular with the Rockettes. We’ve seen the show almost every year since Ryder was 2 years old.
I remember my parents taking my siblings and I when we were children. As if I wasn’t in full swing holiday mode, the tree and the show immediately will put you in the holiday spirit! It’s so cool that they keep the show fresh each year by updating some parts of the plot, while keeping the classics like The Twelve Days Of Christmas, and the toy soldier number.
This year, our neighbors joined us, so it was so cool to see the kiddies all get excited, while wearing their little santa hats and reindeer antler headbands.
Huge thank you to Jolly Green Giant for hosting us. The iconic brand, which makes many appearances on our dinner table, has recently launched a new line in the frozen food section, including Veggie Tots, Riced Veggies, Mashed Cauliflower, and Roasted Veggies.
My children’s new favorite is Green Giant’s Cauliflower Fried Rice. Using their Cauliflower Riced Veggies, and a recipe on the back of the bag, I whip up homemade fried rice in a flash. It’s a great way to give them some of their veggie servings, and by adding some shrimp or chicken, it’s a great source of protein too.

INGREDIENTS
1 tablespoon vegetable oil
1 large clove garlic, crushed
1/2 teaspoon grated fresh ginger
1 (12-ounce) package Green Giant® Riced Cauliflower Medley
2 tablespoons soy sauce
1 egg, lightly beaten and scrambled
Heat vegetable oil in a large nonstick skillet and cook garlic and ginger over medium heat 1 minute. Add Green Giant Riced® Cauliflower Medley and cook 5 minutes, stirring frequently, or until vegetables are tender-crisp. Stir in soy sauce and cook 1 minute. Stir in cooked egg and continue cooking 1 minute or until heated through. Add shrimp or chicken of your choice.
